What a beautiful Memorial Day weekend we had here in NJ! The sun was shining; the temperatures were in the 80’s…it truly was the beginning of summer!
We had a nice relaxing time with my boyfriend, we went to the movies and enjoyed a few picnics in our yard.
So I decided to try a recipe that I saw on the internet a while ago…ice cream made with just 1 ingredient!
Yup you heard me right…only 1 ingredient, and it’s dairy and sugar free!
You will only need a banana…that’s it! I adjusted the recipe a little bit and I have to say: it’s delicious and it truly feels like eating a bowl of delicious ice cream!
Here’s my recipe for you, enjoy!
All-you-can-eat banana and almond butter ice cream
Ingredients for 2 people:
3 Organic bananas, ripe, with a few brown spots
1 Spoon of organic almond butter
Mixed organic berries
Chopped organic almonds
Peel and cut your bananas in small coins pieces. Put them on a tray and freeze them in your freezer (at least a couple of hours).
When they are frozen and hard put them in a food processor and start blending them on high.
In a few minutes you’ll see them turning into a creamy texture, exactly like ice cream! Keep scraping the bowl of the mixer so everything gets very well combined!
When they turn into a nice cream add one spoon of almond butter and mix all together!
Your ice cream is ready to be served! Top it with some mixed berries and some chopped almonds.
It was my first time doing it and I’ll be making it more often. I’m going to try different toppings as well, from walnuts, to chocolate chips, to caramel.
You can also refreeze it!
