The mellow feta and tomatoes

The love for cooking runs in my family. My Mom was an amazing cook and my sister, my brother and I, all love to play in the kitchen.

I love to entertain and have people over. Every year my boyfriend and I have a big Christmas party and it’s such a joy to prepare the food; last year we also had a Halloween party and it was so much fun to come up with some healthy ‘halloweenish’ dishes! I will post recipes when we get closer to the date this year!

The kitchen was always the busiest room of the house, we would always gather there to chit chat while my Mom was preparing something. I remember decorating cookies with her like it was yesterday. If I close my eyes, I can still smell them.

She was the perfect host: she would decorate the table with such beautiful touches, from flowers to self-made centerpieces, she was very artistic and I’m very happy that I got that side from her. My boyfriend always says to me that he can tell just by looking at a picture of us what season or month we were in because he can see the decorations in the house 😉

I just took out all the little things I have for Easter and they are just so pretty! The bright spring colors bring so much light into the house. It’s important to make your home a beautiful place, to de-clutter and make it a place you look forward to being in, a place that calms you down and gives you a smile the moment you walk through the door.

Today I have another very easy recipe for you, I have to thank my sister for this one . She lives in Athens now, she’s an anthropologist and an amazing cook!

One night, a few years ago, when I visited her in Greece, she prepared this fast dish and I loved it, it melts in your mouth…

The mellow feta and tomatoes

Ingredients:

A thick slice of organic feta cheese

Organic beef steak tomatoes

Organic extra-virgin olive oil

Organic dry oregano

Salt and pepper

Preheat your oven at 350 degrees.

Put the sliced feta in aluminum foil, top it with a thick slice of tomato, just a pinch of salt (the feta is already pretty salty you will really need just a few grains) and a pinch of pepper. Drizzle it with some extra-virgin olive oil and close the aluminum foil on top.

Put it in the oven for about 10 minutes or until the feta is nice and soft.

Serve immediately and enjoy!

The friendly grilled avocado on multigrain bread with shaved parmesan cheese

I’m a big fan of avocados! I love the taste, the texture and they are so very good for you, for so many reasons.

They have a variety of necessary minerals like potassium, calcium, vitamin C and K, folic acid, copper, sodium and dietary fibers, protect cholesterol related diseases, reduce risks of cardiovascular diseases, and are good a antioxidant too!

And the list goes on my friends! It’s one of those must-haves in your kitchen.

I want to share this fast and easy recipe; you can use it as an appetizer or as a side dish for a fresh brunch! Enjoy it!

The friendly grilled avocado on multigrain bread with shaved parmesan cheese


Ingredients:

1 ripe organic avocado

Multigrain bread

Parmesan cheese

Organic lime

Organic olive oil

Salt and pepper

 

Peel, pit and cut 1 avocado in half.

Mix a bit of oil of olive and lime juice in a bowl.

Brush the avocado with the oil, lime juice and put it on the grill for a couple of minutes on each side.

Meanwhile brush your sliced multigrain bread with some olive oil and grill for 30 seconds per side. (You can also toast it in the oven).

Grab your grilled avocado and in a bowl mash it with a fork.

Top the toasted bread with some shaved parmigian cheese.

Add the avocado on the bread and drizzle it with the rest of the oil/lime juice.

Add a pinch of salt and a pinch of pepper.

Enjoy it!!!
