The honest apple and cinnamon oatmeal

There’s an expression in Italian that says “Il buongiorno si vede dal mattino” and it means that you can tell, from how things start, how they will evolve…

Well I have to say, I always start my day with a big smile on my face and I remember to be thankful for everything that I have and everything that I’ve had.

I also, as you know by now, love breakfast! It’s connected to beautiful memories and I love its simplicity.

I remember growing up in Italy and having breakfast in the garden in our summer house in August, it was such a treat!

My Mom would prepare everything from scratch from marmalade to special cakes or pies just for breakfast.

I still remember sitting outside on these big chairs and their comfy blue pillows, I could smell the grass freshly cut, the sun already warm was waking up the forget-me-not flowers that to me looked like a river through our garden.

Most of the times I was already wearing my bathing suit because I couldn’t wait to go to the beach! I would eat my breakfast with my family planning what to do during the day. We would usually spend most of the time at the beach and at the pool, we would run around with our bicycles and we would always eat outside in the garden and it was always so magical for me.

This morning, I woke up with a beautiful light coming through the curtains and even though spring is still making us wait this year, the sun was casting such a beautiful glow on my yard that I wish I could have sat outside with a nice cup of tea.

I decided to make some oatmeal this morning, and this recipe it’s very fast and super yummy!

Oatmeal has so many wonderful qualities!

Being a complex carbohydrates sugar free oatmeal will improve your digestion. It will help you stabilize your blood sugar, keep your energy at an even level, and help you feel satisfied longer after your meal.

A complex carbohydrate has a low glycemic index.

This means it is turned into a simple sugar very slowly, it raises our blood sugar slowly by staying in the stomach longer, decreasing our hunger and cravings for the simple carbohydrates foods, that is the junk food we are surrounded with!

I love how you can dress it up with different fruits, and toppings, from apples to yogurt to almond butter! And I’ve used it to make cookies as well and they are oh-so-good!

So today I’m sharing with you my recipe for my “honest apple and cinnamon oatmeal” and this is my ‘honest’ oatmeal because it’s a genuine, straight forward breakfast, no gimmicks, just a sincere ‘good morning’ from me to you!

The honest apple cinnamon oatmeal


 

Ingredients

½ cup of organic old-fashioned/rolled oats

1 cup of water

½ tsp of salt

1 organic red apple

organic cinnamon

organic honey

Peel, core and cut your apple in pieces.

In a small saucepan put 1 cup of water and the apple pieces.

Put in on the stove on a high-medium heat.

Add the salt.

Bring it to a simmer, add the ½ cup of oats, the apple, the honey and cinnamon to taste, reduce the heat to medium-low and simmer for about 5 minutes, stirring every now and then until the oats are ready.

Play with the doses a bit, for example I do like my oatmeal more on a ‘drier’ side so I don’t put too much water, and I also like it with an extra punch of cinnamon and honey so I usually keep an eye on those two 😉

It’s important to play in the kitchen, you have to find your flavors! Always taste you dishes and be sure you have everything you need, some of you might not need the salt, some of you might want a bit more…just see what you can create!

The blissful almond flour pancakes with mixed berries

I woke up this morning and I felt like Bill Murray in “Groundhog Day”!

Outside there’s a white coat of snow and glancing at the sky it doesn’t look like it’s over yet…

We had a very snowy winter this season and the last snow melted just a few weeks ago in our yard…I’m very much looking forward to spring and all the beautiful colors, hopefully it’s not too far away.

Looking at all the snow made feel like having a nice ‘happy’ breakfast! I love breakfast, it’s one of my favorite meals. I remember having breakfast in Italy with my family, I remember the house waking up, everybody getting ready for school, Dad doing his morning exercise routine, Mom preparing us a delicious meal usually with home made marmalade and fresh out-of-the-oven bread…I can still taste it in my mouth and in my soul!

So this morning I made my almond flour pancakes, they are super easy to make…no sugar and trust me they are “I gotta lick the plate” delicious!

 

The blissful almond flour pancakes with mixed berries

They serve 2.

Ingredients:

1 cup of organic almond flour

4 organic eggs

2 tablespoons of organic honey (and some extra for final drizzling)

1 teaspoon of organic vanilla extract

¼ teaspoon of baking soda

1 cup (if you want it really berry!) of organic mixed berries

 

 

Heat up your pan.

In one bowl whisk together the almond flour and the baking soda.

In another bowl whisk together the eggs, the honey and the vanilla extract.

Pour the dry ingredients with the wet ones and mix all together.

Add your berries!

 

You can use a small measuring cup to pour the mixture into the pan. As soon as you see them bubbling up you can flip them. Resist the urge to press them down, it will not make them cook faster and you’ll lose the fluffiness!

Arrange them on a plate, with some extra fresh berries and a drizzle of honey.

Dig in and enjoy it!

This breakfast is sure to put a big smile on your new day!
