The uncomplicated kale salad

Here’s a fast and very yummy salad recipe with coconut oil.

I’m a big fan of coconut oil and I use it every day!

This recipe as always is very easy to make and you’ll feel like you are at a fancy restaurant for lunch!

Ingredients:

Organic Kale

Organic Chickpeas

Organic Black Olives

Organic Carrots

Organic Avocados

Organic Extra Virgin Coconut oil

Organic Lemon

Himalayan pink salt, pepper

 

As always play with your ingredients…use what you need.

Wash your veggies very well.

Cut your kale in bite size pieces and place it in a big salad bowl.

Cut your avocados in small pieces and add it to the kale.

Add the chickpeas and the black olives.

Meanwhile in a pan heat up a good tablespoon of coconut oil on medium.

Slice your carrots and cooked them in the coconut oil for a few minutes, until tender.

When ready pour them and the warm oil on the salad. The heat from the oil will melt the salad a bit, but don’t worry it will not become soggy because kale is very crunchy. Add a touch of lemon, salt and pepper and voilà your fancy salad is ready!

The casual summer salad

If you know me a little bit, you know I love summer!

I love everything about it: I love the warm weather, the sunny days, the blue skies, and even the sudden thunderstorms.

I love the light bugs, who I call ‘fairies” that dance around in my yard at dusk.

I love the fresh cut grass smell that reminds me of many years ago when I used to work as an entertainer in different touristic villages like Club Med, in Italy. I remember working all day with fellow actors, singers, and athletes and then performing every night in front of large crowds of sunburned tourists, and afterwards walking back to our rooms under a starry night wrapped in a smell of fresh grass and flowers.

I love food in the summer, I love eating all the different summer fruits; they’re so tasty and refreshing!

I love going to the beach and swimming in the ocean! I find it so calming and so therapeutic!

I love to sit outside in my yard with my lovely boyfriend to take some vitamin D straight from the sun or to unwind after a long day with a nice healthy dinner.

And I want to share with you a very simple recipe I made the other night, it’s very casual but it will make a beautiful impression with your friends!

It’s a fast and yummy salad. I hope you’ll enjoy it!

The casual summer salad


Ingredients for 2 people:

1 head of organic dark lettuce

4 organic hard boiled eggs

Organic chickpeas

Organic kalamata olives

1 organic avocado

Organic cherry tomatoes

Organic feta

Organic olive oil

Salt & Pepper

Wash your veggies very well. Meanwhile put your eggs with cold water to boil on a stove.

Peel and dice your avocado, cut your lettuce and put them in a big bowl with the chickpeas, the olives, the cherry tomatoes and the feta cheese.

Dress the salad with the oil of olive, salt and pepper, toss everything together.

Remove the eggs from the stove and run them under cold water, peel them and cut them into wedges and lay them down of your salad.  Drizzle the eggs with some oil of olive, salt, pepper and voilà your meal is ready to go!
